Reverend Elijah Craig was the complete renaissance man, baptist preacher and Kentucky entrepreneur, he is the man most credited with the establishment of Bourbon Whisky. Our reverend survived the Revolutionary War to build his Distillery in Fayette County, one of the first producers to age his liquor in charred oak casks, a unique Bourbon process which imparts distinctive reddish hues and identifiable caramelled corn flavour. American Bourbon is inimitable. It can only be made in the USA, and must be aged for two years in new American oak barrels that have been charred on the inside. There is also a requirement that the distillate be composed of not less than 51%, and not more than 79% corn, to be entitled to the name Bourbon. Distilled using traditional methods and aged for five years in American oak barrels, Cougar's distinctive flavour is enhanced by classic charred oak-toast flavouring giving rise to a sweet, vanilla nose. The legend begins in New Orleans, where the Bulleit family emigrated from France in the 1700s. Around 1830, Augustus Bulleit moved from New Orleans to Louisville Kentucky, taking with him his talents and skill at brandy making. As a tavern keeper in Louisville, he began producing small batches of Whiskey. Relentless in his pursuit of perfection, he experimented with different recipes. When he found one that met his expectations, the inspiration for Bulleit Whiskey was born. After more than a century, the Bulleit family finally returned to Whiskey making in 1987.

The Buffalo Trace whiskyworks were established circa 1800 in Franklin County along Kentucky River, at a place where herds of buffalo would cut a ford in the days before the iron horse. The oldest continuously operating Distillery in America, granted special license during Prohibition to make Whiskey for medicinal purposes, Buffalo Trace have claimed more significant international awards than any other Distillery in the world. The recipe of this remarkable bourbon dates back to 1796, when Basil Hayden himself was a master distiller. Hayden was born and raised in Maryland, where he learned to make whiskey from rye. When he came to Kentucky, Hayden began making whiskey from a base of corn, but added a higher percentage of rye than other distillers, resulting in a smooth, mild bourbon that was distinctly his own. Basil Hayden's is unique in that it utilizes twice as much rye in it as the other bourbons in the Jim Beam Small Batch Collection. This abundance of rye gives it a slightly peppery taste and aroma, perfect for sipping on the rocks.
