The Royal Navy was renowned for its daily ration of grog and refreshments of Rum before and during battle. Pusser is shipboard slang for purser, the officer in charge of administering the Crown's treat. The original recipe called on a blend of five West Indies Rums, curiously it was fashioned to taste somewhat like a Whisky to please the palates of English and Scottish sailors. In 1888, several of the small producers distilling Rum out of the molasses left over from sugar refining, established the Bundaberg Distilling Company. Bundaberg Watermark is a limited release for the benefit of all who have been affected by the 2011 Queensland flood disaster.

Bundaberg Rum began over one hundred years ago in the sugar cane districts of Queensland. The town of Bundaberg boomed in the 1880s when Queensland enjoyed a surge of economic growth. Farmers began converting the molasses which was leftover from sugar refining into rum, and little distilleries began to crop up. Some came together in a co-operative called the Bundaberg Distilling Company. In 1961 the Bundaberg company introduced the polar bear as its mascot, to imply that the rum could ward off the coldest chill.

While the name Bundaberg has character and is part of history, it's not a moniker which rolls readily off the tongue. Bundaberg's a town near the coast, some four hundred kilometres north of Brisbane. With its tropical climate and rich soils, the area is ideal for sugar. Rum is traditionally distilled from molasses which remains after sugar is extracted from cane. Little independent distilleries grew around the nascent 19th century Queensland sugar industry. In 1888, several of the smaller producers banded together to establish the Bundaberg Distilling Company.

The first barrel of Bundaberg rolled out of the distillery in 1888. Production ceased from 1907 to 1914 and from 1936 to 1939, after two catastrophic fires which devastated the plant, the second of which spilled much of the distillery's inventory into the nearby Burnett River. Centenary Vat 100 is drawn and assembled from precious old stocks of Australia's finest Rum to celebrate 100 years of Bundaberg. Urban myth surrounding Vat 100 Centenary suggests that it was withdrawn from circulation and that any surviving bottles are a rarity.

Bundaberg Port Barrel is the second limited release from the exclusive Master Distillers Collection. The Bundaberg Master Distillers Collective is continuously exploring ways to create great tasting Rum. They used their expertise to finish special Rum Reserves in Port barrels and then add them to a perfectly balanced blend of six year old Rums. These Port barrels have been sourced from the Barossa Valley and have been ageing Ports for up to 35 years. Allowing Rum the right amount of contact with Port infused oak barrels is initself, a highly challenging art.

It doesn't come any better than Beenleigh, the original Aussie Rum from the first Brisbane sugar mill, established 1867. Within a few years, there were thirty mills in the vicinity, a floating Rum Distillery, the SS Walrus would drift along from one mill to the next, converting the by products of sugar manufacture into bootleg Liquor. Beenleigh Port Rum is treated to five years of age in small Brandy vats, followed by transfer to Port Barrel for eighteen months. Unravelling layers of complexity, filled of glorious Muscat and Port characters through to the soft, aromatic finish.
