Forest Hill is a Great Southern of class and distinction, a Chardonnay of elegance and controlled intensity. At the core of Forest Hill's elite range of single block editions, are the original estate plantings of the 1960s and 1970s. These gnarly old vines are deep rooted and dry grown, defined by their low vigor and scant harvest of tiny berries, conspicuous for an intenity of flavour and wonderful crystalline textures. These are the earliest and most precious parcels of Chardonnay in all Great Southern, yielding a graceful yellow wine, brimming with golden peach and grapefruit characters, florals, almonds and flint, its powerful mineral finish driven by juicy, ripe stonefruit acidity.

Forest Hill Vineyard is planted very close to Mt Barker, its unique topography, deep gravel soils and proximity to the Southern Ocean assures mild summers with cooling southerly breezes. Identified in the 1970s by gentleman James Halliday as the most outstanding Riesling of the Australian west, Block 1 is a sacred old parcel, one of the first ever planted in Great Southern. Wild yeast fermented for richness and complexity, vibrant and crisp with juicy natural acidity, Block 1 sings of its Mount Barker provenance, a long, lingering, flinty finish in a graceful, old vines, Riesling way.

With an abundance of clean water and healthy vines set against a backdrop of karri and jarrah forests, the picturesque Fonty's Pool vineyards are named after a huge dam built in the 1920s. Originally a vegetable farm which operated for over a century, the property was identified by the Cape Mentelle winemaking team as an outstanding site for growing wine grapes. A lively fruit driven style was achieved by handling the fruit with care and respect. Partial barrel fermentations and wild yeasts have enhanced the wine with texture and complexity.

Two thirds Sauvignon Blanc, the balance of Semillon, are sourced from good vineyards in the Wilyabrup and Karridale subregions of Margaret River. Parcels are selected on the basis of the desirable characteristics that they can bring to the final wine. Wilyabrup contibutes lovely lifted tropical aromatics whilst Karridale makes for a fine and elegant palate structure. Rarely ever made in vineyards of the new world, Vin Gris is a Blanc de Noirs, rather common in many parts of Europe, where grapes of either colour can be mix and matched for a rainbow of wine styles. Felton Road treat their Pinot Noir to a whole bunch press and prompt draining of skins, infusing the juices with rakish coppery hues and just a soupçon of textural grape tannin. A prettily perfumed nose of strawberry and wild flower, Vin Gris palate is laden with fruits yet pleasingly dry, herbaceousness and apple, its long, tasty finish, seasoned by sprigs of fennel and bay.

Central Otago is the most southerly wine region in the world, at the edge of sustainable viticulture. Hot days, cool nights and long dry autumns are perfect. Clones on a variety of low vigor rootstocks were planted to free draining, low fertility soils during the 1990s. Felton Road's unique gravity flow techniques permit juices to peacefully ferment and tranquilly age in oak, sparing the wine any trauma as it gently evolves. The ultimate integrity of texture encourages the palate to open softly, blooming with dainty florals and ripe fresh stonefruit over a pleasing seam of juicy minerality.

The illustrious Mendoza clone Chardonnay was planted 1992 to a gentle east facing slope right next to Block 3. Grapes are whole bunch pressed and gravity fed to seasoned French oak for a wild indigenous yeast vinification. Ferments remain in barrel for a long and languid sixteen months maturation. A multi dimensional Chardonnay in the well established, mouth filling style of Central Otago. The palate is where it all becomes more serious with an array grilled nut and baked goody flavours, the deep schist soils of Block 2 are conspicuous and up front in the lengthy mineral finish.

One of Victoria's most distinguished and prolific vineyards, Halls Gap delivered decades of splendid harvests to Seppelt and Penfold, before being retained by the illustrious Mount Langi Ghiran. The inhospitable, rocky soils produce stately Rieslings of sound structure and the most pristine fruit characters. So highly fragrant of spring blossoms, kaffir lime and lemon curd, simply a sensationally clean palate of uber fine citrus flavours, luscious white fruit characters and bracing lime mineral acidity, balanced by a long and persistent mineral drive before an everlasting, complex and memorable finish.

From a stately bequeath of the original Halls Gap plantings, established 1969 on the inhospitable slopes of the Victorian Grampians. The highly precious, single block of fully mature vines yields a meagre crop of extraordinary Riesling grapes, the parched berries are ripened to perfection by the clear skies and frigid climes, forming an indulgence of profound esters and intense flavours. Gloriously perfumed yet magnificently dry, lustrous and textural to the palate, populated on the tongue with delicate notes of ripe green apple and soft white fruits, citrus rind and sprays of fresh acidity.

The efforts of Fairhall Downs make a good case that small is beautiful. Restricted cropping and a back to basics approach in viticulture achieves the purest, most natural wines. Fruit is often selectively hand picked, vine by vine as grapes achieve ripeness. The essential Marlborough Sauvignon Blanc with intense aromas and vibrant flavours.

A pure single vineyard Pinot Gris grown to the most splendid aspects of Brancott Valley. This exceptional terroir, a combination of superb free draining soils and low annual rainfall with good sun exposure, create the optimum conditions for grapes which translate into some of New Zealand's finest wines. Fairhall Downs looks close to rivalling those exuberant Pinot Gris which are most famously produced in Alsace.

Evelyn County Estate continues to make thumping award winning Chardonnays. Chardonnay was one of the first three varieties to be planted at the vineyard in 95, whilst the first vintage Chardonnay was selected to be included on the Sydney Opera House's Bennalong Restaurant wine list. The year's growing season allowed for ideal fruit ripeness, whilst maintaining perfect natural acidity, a feature that is becoming pleasingly predictable in fruit sourced from the Evelyn County vineyard. The fruit displayed an intensity and power that carried through to the nose and the palate of the resulting wine.

Chardonnay vines fare exceptionally well in Margaret River, as appropriate shading yields intensely flavoured fruit with excellent natural acidity. The afternoon sea breezes typical of the region, cap the daytime temperatures and produce cool summer nights for which Margaret River is renowned. The balmy climes encourage ripening of the white varieties as flavour ripeness is achieved at lower Baumes with excellent acid retention. Grapes must be picked from midnight to 7am and are processed separately without delay to preserve quality and freshness.

Margaret River Semillon is generally noted for its thistle/ vegetative qualities and for the weight and structure it carries. Metricup Road is made from fruit grown to vineyards located in the central and southern reaches of Margaret River. Gerard Boudot is one of Puligny's most gifted winemakers, married to a granddaughter of the late, great Etienne Sauzet. Although techniques are more modern in the hands of M. Boudot, he faithfully maintains Etienne Sauzet's tradition of hand sorting his fruit before applying the most artisanal effort to small batches of 1er Cru Burgundy.
