Tallarook vineyards are situated on the northern slopes of the Great Dividing Ranges in Central Victoria. Originally planted in the mid eighties, some of the estate's sites have been specialized to grow Rhone varietals such as the esoteric Rousanne, winning much recognition and acclaim for Tallarook.

There's something very old world about the imposing wineworks and ancient cellars of Tahbilk. Tahbilk are one of Australia's historically significant, grand old winemaking estates. Founded in 1860 and labelled as Chateau Tahbilk until recent years, it is the home of seriously old, white varietal vineyards. Tahbilk's history with Marsanne can be traced back to the 1860s when White Hermitage cuttings were sourced from St Hubert Vineyard. The grapes in fact were Marsanne and although none of these plantings have survived, Tahbilk still produces Marsanne from ancient stock dating back to 1927, some of the oldest in the world. Marsanne has immense individuality of flavour, good body and well worth trying if you want something different. A long and distinguished succession of Tahbilk Marsanne vintages have claimed multi trophy and copious gold.

Winemakers Kevin McCarthy and Kathleen Quealy are specialists at this style of wine, and initially released the Juliet Pinot Grigio to massive acclaim. Aromas of pear, honey and orange, a decadent palate, fruity and savoury notes with a delicious finish.

Mornington brings something different to the Italianate Moscato, climactically it is blessed with a real advantage. In Australia, there are fewer traditional stylistic conventions to the handling of Moscato, therefore flavoursome and refreshing versions can be crafted which trump the Europeans. T'Gallant fashions their Moscato to display the virtues of simple, high quality winemaking, picking the grapes at a moderate alcohol level, gentlly pressing and not messing about with the wine too much, practices which are all central to the T'Gallant philosophy.

Kevin McCarthy and Kathleen Quealy pioneered the development of Pinot Grigio and Pinot Gris wines on the Mornington Peninsula in the late 1980s. Pinot Grigio and Gris are the same grape, how they are grown and handled throughout the vinification determines their caste into the French or Italianate styling. T'Gallant are well versed at both, the maestros of Mornington. Italian have a tendency to pick grapes earlier for a racy, savoury style. The French wait for riper flavours, developing richer palates that are complex, fuller and fatter.

The higher altitudes of Adelaide and balmy aspects of Bellarine are the pre-eminent Australian microclimes for growing Pinot Grigio. Components from good vineyards have been assembled around a core of estate grown Scotchmans Hill fruit to achieve the consummate Italianate varietal wine in refreshing, new world styling. An intense expression of pear, guava and citrus, fleshy with a mineral backbone. The western districts make the most flavourful, balanced and clean Sauvignon Blanc, to be found anywhere in Victoria. The arduous climes infuse grapes with succulent sugar esters, pristine, phenolic free, brimming with crystaline fruit characters. Summerfield aim at a wonderfully animate style of Sauvignon Blanc, distinctively Pyrenees, defined by its coquettish structure and long, succulent mouthfeel. Bridgeland is one of the most picturesque properties on Margaret River. Originally prime farmland, it boasts one of the largest dams in the region, approximately a kilometre in length and covering eighteen hectares. Bridgeland is endowed with a unique confluence of terroir and clime, a longer, cooler growing season and slower ripening period to produce wines of the highest quality. Barrel fermented in a high proportion of new French oak barriques, battonaged throughout the maturation to infuse opulent textures and extraordinary complexity.

A Burgundy interpretation of Mornington, the ultimate expression of terroir. Three particular blocks have consistently provided Stonier with low yields of quality fruit, mature hand tended vineyards aged well over twenty years. Long recognised in New Zealand and Australia for it's consistent production of vital Marlborough Sauvignon Blanc, the rest of the world is now catching on, as Stoneleigh has been added to the winelist at London's prestigious Ritz. He ultimately pursued his passion for making great wine, working alongside some of the most accomplished names in the industry. Dolan settled on a tally of superb sites in the Yarra Valley from which to draw fruit for his self titled label. Citrus and stonefruits, jasmine notes and flor, guava and grapefruits, the greenness of snap pea, lemongrass and thyme.
