Winemaker Don Lewis adores the tannins, structure and electrifying expressions of Spanish wine. Fruit for Tar & Roses is harvested off elite Heathcote vineyards, much of which must be hand picked, all components are treated separately throughout ferments and ageing. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher gravelly, grantic soils. The first component makes a rounder, fuller fruit driven wine with intense chocolate and earth characters, the latter contributes elegance and restraint.

Don Lewis spent thirty five years at Mitchelton. Nowadays he travels to Spain each year where he makes wine for Merum Priorati, returning to Australia just in time for vintage. Parcels of slowly ripening Pinot Grigio, grown to the cooler altitudes of Valley King, gradually evolve delicious peach and pear flavours. The warmer climes of Stratford at Nagambie bring out gorgeous tropical characters. An assemblage from both climes constructs a luscious wine that's heaven sent for accompanying a grill of swordfish cutlet or tuna steak.

A complex assembly of Grenache and Carine├▒a grown to the Denominacio d'origen Priorato, espoused by an equally stirring addition of Syrah and Cabernet Sauvignon. Priorat is a long forgotten winegrowing area, highly salubrious in its time, it was ravaged by phyloxera and abandoned in the nineteenth century. The rocky, steeply sloped, mineralite soils have been rediscovered by Don Lewis and Narelle King, who take time out from their operations in Victoria once a year to vinify the parched and precious fruit of Merum Priorati.

Sangiovese / Heathcote / Victoria
Sangiovese is a thin skinned grape, known for its savouryness and earthy characters as opposed to ripe berry fruit flavours. It shows an attractive red colour and can be characterised by high levels of tannin supported by ripe acidity. Sangiovese vines are well suited to soils with good drainage and abundant sunshine, both of which are found aplenty at Heathcote. The red wine of choice to accompany veal, prosciutto and sage or piquant chorizo recipes.
 
Don Lewis joined Colin Preece for Mitchelton's first vintage in 1973, and assumed the winemaker's mantle in 1974 when Preece retired

After thirty years of leadership at Mitchelton and auspicious winemaking in the Spanish region of Priorat, 150 kilometres south-west of Barcelona, Don Lewis made the decision to pursue the Tar & Roses label, a collaboration with protegee Narelle King. Lewis adores the tannins, structure and distinct expressiveness of Spanish wines. Grapes are from vines grown to elite Heathcote vineyards, much of which must be hand picked, all components are treated separately during their fermentation and maturation. The larger volume of shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher grantic soils.
