Whole bunch pressed into a choice of vinification on skins or good old fashioned, wild indigenous ferments in well seasoned oak. Batches remain on sedimentery gross lees until June, followed by assemblage into a precious, multi dimensional small batch wine of a mere 165 dozen bottles.
