Originally established in the nineteenth century, essentially on the basis of its magnificent wine growing potential, St Hubert remains to this day one of the finest viticultural sites in Yarra Valley. Vines are all managed by hand and the fortuitous mesoclimes yield the finest fruit. The property enjoys a long tradition for splendid Pinot Noir, recent show successes include back to back wins as best Pinot Noir at the Yarra Valley wine show.

One of the Yarra Valley's original vineyards dating back to 1862, St Huberts currently operates four blocks of distinguished Chardonnay vines. Planted on a gentle slope of well drained grey loamy soils, the fruit from these parcels provides the backbone to one of Victoria's most stately Chardonnay wines. The princely berries translate into a beautifully aromatic bouquet and rich palate, slightly citrus, set against a background of grapefruit, apple and melon flavours all bound together by suggestions of cool climate mineral and French vanilla oak.

St Huberts won much fame in Europe during the latter part of the 1800s, for the extraordinary quality of their new world wine. In the twentieth century, this noble estate lead the Yarra Valley's second golden age. The present day property boasts old vines planted in 1966 which generally yield low crops of intense fruit, brimming with rich flavours. A mere twenty one hectares of vine are crafted into one of Victoria's most enduring Cabernets. A tribute to the quality is the assertion by local growers that these vines produce the best Cabernet Sauvignon in Yarra Valley.

Hubert de Castella's passion for Yarra Valley saw him establish St Huberts in 1862. By the late 1800s it had grown to be the largest winemaking estate, the wines enjoyed immediate success in markets local and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that Yarra Valley again rose to prominence as a wine producing region and St Huberts was once again, one of the leading protagonists.

The fortuitous Pinot Noir vines of Soumah were established along Hexham Road, very near the auspicious Yarra Valley hamlet of Gruyere, just a short drive from the precious plantings of Yarra Yering and Coldstream Hills. A small team of dedicated professionals practise a regimen of holistic, environmentally sound agricultural techniques, for the realization of small yield wines which are evocative of the timeless old world classics. A silky, savoury effort, driven by drying cherry flavours, a twist of sassafras oak and toothy, licorice tannins.

The Morey family celebrate a tradition of winemaking which spans five centuries along the steep banks of Mosel River. Their 2½ hectare vineyard on the outskirts of Beechworth now yields a quality of fruit which would have done the ancestors proud. The Gamay grape traditionally makes a light bodied fruity wine, its thin skin offers little tannin, for a style which drinks superbly on release. Sorrenberg work to a combination of Burgundy and Beaujolais techniques, producing an even more engaging wine through the inclusion of a soupçon Pinot Noir.

Confined to a precious precinct of Yarra Valley, is a belt of superb red earth renowned for producing wines of exceptional quality. Sir Paz produce award winning red on red wines, crafted from red grapes planted to Terra rossa soil. Formerly a chestnut tree grove, the elevated site is perfectly suited to vines, as the grapes experience cool conditions, ripening slowly for maximum flavour development. A racy Victorian accord of Merlot and Shiraz with sophisticated oak handling, a wine of style and character, worthy of a place in any cellar.

Shiraz is sourced from two estate vineyards at opposite ends of the Heathcote region, the Merindoc property in Tooborac to the south and Willoughby Bridge at Colbinabbin in the north. The vines at Merindoc are grown to gravelly, low fertility ironstone soils which infuse the wine with minerality, structure and cooler clime, slower ripened fruit character. Willoughby Bridge is planted on the precious strip of Cambrian rich red dirt, one of the oldest soil types in Australia, internationally renowned for the production of Heathcote's intensely flavoured Shiraz.

The wines of Shadowfax have gone from strength to strength in a very short space of time, due in no small part to the remarkable quality of Werribee fruit. Grapes are all hand picked, transported to the wineworks at Werribee and carefully whole bunch pressed. Juices are filled to a selection of French oak barriques and hogsheads, inoculated by wild indigenous yeasts and fermented to dry. After a term on sedimentery lees in oak, under the expansive and cavernous Shadowfax estate cellars, barrels are racked for assemblage into the final wine.

Of particular importance to Shadowfax are the very close relationships with a select group of growers who provide harvests of the most intensely flavoured fruit. A prolific trophy winner, Shadowfax are a refreshing new wave, vigorously fruit driven, livelier than her Victorian siblings, characterised by slatey, flavoursome acidity, a touch of lees complexity and judicious dryness. A modern style that's perfect for cosmopolitan fare, offering excellent palate weight and solid structure, to accompany fresh fried flatheads or grilled and marinated spatchcock.

This is what fully emancipated Chardonnay tastes like. The magnificentally slow ripening aspects of Macedon Hills sire a style of Chardonnay that defines Victorian viticulture. Wonderfully perfumed with delightfully complex aromas of white flowers, lightly grilled nuts, grapefruits and earth. A concentrated, complex yet magnificently balanced, expansive palate, articulating its cooler origins. Grapefruit pith, citrus and floral flavours are complemented by maritime characters of melon, soft pears and figs. Oak and lees add complexity, tasty natural acidity ensures the palate finishes cleanly.

When Dr Peter McMahon planted the first vines at Seville Estate in 1972, it marked the rebirth of Yarra Valley viticulture. Barber are the entry level to Seville's superlative range, hand crafted to classic Burgundian techniques. Four decades of the Yarra Valley's most inspiring Pinot Noir have consolidated the style and ensconced Seville as a leading marque in Yarra Valley. The aim is to create an earthy, elegant style with gamey, toasty flavours. Low cropping levels ensure the intensity of fruit flavours, maturation in French oak contributes refined complexity.

From the King Valley in Victoria's high country, a good deal of pruning and thinning of Syrah and Dolcetto vines, together with some hand picking and selection of fruit. Cane cutting techniques have shrivelled the berries, concentrating the sugars and bittersweet grape tannins, whilst still on the vine. A wine of explosive Dolcetto characters with flavours akin to the shed dried styles of Italy's Veneto region, De Bortoli have achieved, an exciting fresh red, fully Euro in styling with the emphasis on fruit, suppleness and food friendliness.

A totally different style, this one is made for immediate drinking, and is packed with vibrant cherry fruit. A true barbecue stopper. Excellent value and highly recommended.

Joseph Seppelt was one of many Silesian migrants who fled persecution to settle the new colonies of Australia. He sowed vines in 1851 and had the foresight to establish a brand which endures as one of the nation's great traditions. His son was Oscar Benno, also blessed with a rare sense of vision for the future, he took the selfless initiative to lay down barrels of the finest fortified wine for a one hundred year endowment. These priceless stocks serve as a backbone for the construct of the most lusciou fortified wines, treasured by enthusiasts around the world.

Cellar No7 Tawny is a contemporary take on the classic Australian Tawny style. Predominately Shiraz and Grenache grapes assembled with spirit from Cellar No.7 of the famous Blue Stone spirit bond building at Seppeltsfield, it offers vitality and intensity of fruit.

Seppelt Rutherglen is made from the Brown Muscat grape, harvested at peak ripeness and fortified to give an aromatic spirit lift. This immensely satisfying Cuvee marries batches of the ripest fruit with careful oak maturation, and a highly fastidious regimen of racking whilst under cellar, with skillful and artisanal blending, to create a flavoursome, yet easy to appreciate fruit driven style. Carefully matured at the estate's wineworks at Seppeltsfield, Cellar No 8 is fragrantly spiced with floral and rose petal aromas, the taste is rich and luscious.

Predominantly from the Seppelt property in the Grampians, a third of the fruit is picked off good vineyards at Bendigo, a further component is sourced from splendid Heathcote sites. An assemblage of Shiraz grown to somewhat different terroirs across the finer viticultural precincts of Victoria, the cooler climes of Grampians contributing a richness of fruit to balance the earthy tannins of warmer aspects to the north. An elegant, peppery wine, with expressions of berries, plum and soft tannins, mellowed by oak and resolving on a long, savoury finish.

This regional Shiraz is sourced from unique viticultural meso-climates that were formed from the gradual weathering of the Grampians over millions of years. From these batches wines that expressed high quality, regional fruit characters were selected to create a Shiraz that displays purity of fruit, elegance and great aging capacity, classic characteristics of the Grampians region.

The flagship sparkling from the House of Seppelt, Salinger is made to authentic Methode traditionelle. Seppelt have had more experience with this uniquely Australian style of wine than anyone else in the world. Although there are no precise records, it appears that Seppelt wre experimenting with sparkling red wines as far back as the 1890s. Seppelt Original is constructed to true Method Traditionelle. An assemblage of intensely flavoured Shiraz wines, barrel matured and aged on yeast lees, creating a complex Cuvee with great depth of flavour and length of fruit, long dusty oak, mouthfilling berry plum flavours and a resplendent, lively effervescence.

Seppelt are in possession of some of Victoria's most distinguished vineyards. Their approach is to harness the strength and characteristics of each site and create elegant wines. One of Australia's eldest estates, the Seppelts of today strive for the same standards of excellence which brought iconic status to some of their most renowned vintages. Planted in the mid 1970s, Mount Ida Vineyards were decimated by Ash Wednesday fires in 1983. A richly flavoured and intense Shiraz wine, Mt Ida exhibits a dense powerful palate of extraordinary complexity.

It was Karl Seppelt who established the greater Henty region to viticulture in 1964. Burgundian varietals perform brilliantly under the cool ripening, maritime influenced climes, all white grapes excel. Originally chosen on the virtues of a growing season and terroir which favoured the production of cool climate sparkling wines, to rival the nation's best, Seppelt's Drumborg Vineyard has delivered vintages of the most remarkable Chardonnay. Textural, complex and rich, the Chardonnay of choice to accompany white pudding, milk veal or suckling pork.

During the outstanding Rutherglen vintage of 1983, a parcel of fruit with amazing intensity of flavour, reached an incredible natural sugar ripeness at 36 degrees of Baume, it was set aside and treated to a no expense spared vinification for ageing in small oak casks. This single vintage of precious fruit forms the basis of Seppelt GR 113 Rare Rutherglen Muscat, a wine with an immensely rich, complex palate and outstanding length, the definitive, aged Rutherglen Muscat, recipient of multiple trophy victories and countless gold medals.

The House of Seppelt has created some of the most praiseworthy, historically significant, and highly awarded sparkling wines in Australian show history. Fleur de Lys is a popular, non vintage Cuvee, assembled from base wines across several harvests, bottle fermented to a level of complexity and consistency of style from year to year. Fashioned from Chardonnay and Pinot Noir grown to Seppelt's extensive and specialised cool climate vineyards, Fleur de Lys is soft and elegant in style with subtle, integrated fruit and yeasty aromas.

Seppelt planted its Drumborg site in 1964 to grow premium quality, cool climate fruit. A vineyard that experiences challenging weather conditions, Drumborg does not deliver every year, but when it does, the results are outstanding. The bright lime and grapefruit flavours combine with a mineral acid backbone to create a wine of great elegance that is irresistible upon release, destined to add depths of flavour as it evolves.

From one of the southernmost vineyards on Australia's mainland, Drumborg at Henty is an elite site planted to several different varieties of red and white grapes. Seppelt do not bottle a pure Drumborg wine at every vintage, the growing season must be excellent and the quality of harvest must be second to none. A splendid construct of extravagantly barrel fermented, single vineyard Chardonnay from a unique and distinguished site, articulating the splendid Drumborg minerality, a wine of indelible length and exquisite poise.

Originally crafted by the legendary Colin Preece and labelled as Burgundy, Chalambar has become one of the most highly sought Seppelt releases each year, due to its consistency, quality and value. The House of Seppelt are custodians to one of Australia's most auspicious cellars, constructed by miners who took up viticulture when the Victorian gold ruch was in decline. Their efforts have left a legacy which provides the ultimate environment for ageing stocks of Seppelt Chalambar, a fully engaging Shiraz of layered fruit and disciplined tannins.

The legacy of early Victorian vineyards is maintained through a curious canon of place names on Seppelt labels, Chalambar is a tribute to unemployed miners who turned to viticulture as the gold rush came to an end. Deriving its name from the picturesque mount near Great Western, Chalambar is a true regional icon that's been playing to packed houses since 1951. Seppelt were so excited about the quality of their Bendigo Shiraz that it was decided to release the precious parcels as a single label wine. Named Benno to celebrate the late, great Benno Seppelt's endeavours to promote Victoria as the nation's premiere wine growing region, Seppelt maintain the tradition begun in 1851, of producing Grand Cru quality Victorian Shiraz, a responsibility that the winemaking team do not take lightly. A distinctive single vineyard Shiraz with a great breadth of fruit and flattering, supportive oak over solid, complimenting tannins.

A boutique, hands on winemaking enterprise of extremely limited production. Sedona take aim each vintage to construct a bold varietal style of Cabernet Sauvignon, showing vibrant characters of blackberry and cassis, with a power and weight of fruit that has become a Victorian benchmark. A glad all over, western districts Shiraz with strong regional expression and superior concentration of fruit. Hamish Seabrook comes from a long line of wine merchants, most notably W.J Seabrook & Son. He has made the most of his family's contacts in the industry to isolate and secure parcels of the finest Pyrenees Shiraz, all grown to great vineyards, closely husbanded by the most devoted local vignerons. Crafted to an old fashioned claret style, driven by a hansom carriage of refined, ebony oak tannins, brimming with the moreish decadence of spiced cherry ripeness and chocolate plum richness.

The Hill is named after a high point from which enthusiastic Scottish settlers would view horse races. Scotchmans Hill have fashioned this exceptional range of wines to be fresh and fruit driven, ideally suited to contemporary tastes, perfect for early consumption.

From their base of operations in Geelong, Scotchmans Hill have trekked the Adelaide Hills and sailed across the Tasman in pursuit of the finest Sauvignon Blanc. As exciting for its flamboyance of tropical fruit as for pungent, green herbaceousness, serve chilled and enjoy alongside prawns, Thai chicken or yum cha.

Mount Bellarine, on which Scotchmans Hill is located, is an extinct volcano where thick, black, moisture retentive and fertile volcanic soils of black clay with basalt subsoil lend individual and intense flavours to the wines. Chardonnay grapes grown here exhibit penetrating characters of stonefruit and melon with firm acid structures and crisp textures. Scotchmans Hill also retain vineyards in the King Valley where the cooler climes produce a softer, rich style of Chardonnay with vivid expressions of yellow peach, melons and aromatic tropical fruits.
