King Louis XIV visited Château Chambord in 1685, where he enjoyed a marvelous Liqueur made from wild black raspberries. Just two hours south of Paris, in an area fondly called Jardin de France, is the home of Chambord. This exceptional Liqueur is crafted on the grounds of La Sistiere, a magnificent chateau nestled in Cour Cheverny along the Vallee Loire. Chambord employ an extravagant three step process, possessing an unprecedented level of high quality ingredients, complexities, flavour and aroma. Macerations of fresh raspberries and blackberries in a neutral spirit over the course of several weeks are followed by a delicate press and filtration. Natural extracts of brambleberry and black currant, Madagascar vanilla and fragrant herbs are added with extra fine Coognac. The Chabot family established their repute in the wines and spirits trade circa 1828. Based in the village of Labastide d'Armagnac, Chabot came to the attention of Cognac man Michel Camus, who was instrumental in making Chabot into Armagnac's biggest export. Armagnac is distilled in much lesser quantities and by much smaller producers than neighbouring Cognac, achieving a finer, more complex, oak influenced spirit.

Chabot distill their Eaux de Vie in a column still and mature their Armagnac in black oak. Over the years the spirit mellows, extracting colour and flavor from the cask. The spirit evaporates over time as the angels take their share, concentrating the fruit and developing complexity. The Chabot family traditionally employed geese as guardians of the premises where the oldest Armagnac Brandies are kept, reposing under the deep, dark ageing cellars. Better than dogs and almost carefree, they serve to prevent any attempt by strangers to penetrate the Chais.

Armagnac is made in the southern province of Gascony. There are three appellations, Bas Armagnac, Haut Armagnac and Tenareze. Armagnac is the finest of all the French distillates and is mentioned in records dating back to the 15th century. The Chabot family can trace the origins of their production to the village of Labastide D'Armagnac. Winemakers and suppliers of wine grapes, they established their own brand in 1828. Chabot remains family owned and operated, one of the most significant exporters of exceptionally fine Eaux de Vie in France.

Crafted to an ancient recipe which dates back to the Benedictine monks, who founded San Clemente a Casauria Abbey in A.D. 1100, on a site very near the current Enrico Toro distillery. An intensely flavoursome Abruzzo spirit, infused through a maceration of native aromatic herbs picked from bespoke locations along the Majella and Morrone mountains. It's distinctive colour, nose and warm afterglow are derived purely from the natural ingredients. A sensation when enjoyed neat, Centerba 72 also makes the most delicious corretto.

Grappa is a unique distilled spirit and is exclusively produced in Italy from the marc of the best wine grapes. Carpenè Malvolti has been one of the first companies to distill commercial quantities of Grappa, after expanding operations at the end of the 1800s. To ensure the quality of its products today, as in the past, it flanks its most qualified suppliers to carefully select the white grapes and to take the utmost care during distillation. Oenologists attach special attention to selecting the best and freshest marc without the stalks.

A Massachusetts grocer named Hiram Walker set up business in Windsor Ontario. He took up the challenge of making Whisky after his original passion for home made cider vinegar production failed to return a profit. Hiram's loss was very much the world's gain. He produced his first barrels of Whisky in 1854, they were an immediate hit with customers. Never one to miss the main chance, he bought two farm lots up the river from Windsor and built a Whisky Distillery. CC, the first Canadian Whisky to have a brand name and to be sold in sealed bottles, was born.
