Sandalford is designed to be fully fruit driven, completely Margaret River, refreshingly unoaked, classic and dry. The winemaking story goes back, way back to the 1840s as the second land title in all of Western Australia. In 1972 Sandalford broke out of their Swan Valley environs and established an estate vineyard along Margaret River, today it is one of the oldest and most salubrious. Peter Lehmann's story with Noble Semilon goes back many years, when Andrew Wigan had the good fortune of experiencing vintage within the vineyards at Chateau d'Yquem, home to the greatest sweet white wine in the world. What he had assumed to be spoilage, was in fact Botrytis Cinerea. Traditionally, Botrytis affected wines are the most complex and longest lived of all. The Barossa Valley is an ideal region for late harvest, given the quality of local Semillon and the warm conditions that continue well into vintage.

Bonfire Block was a dilapidated old vineyard site, destroyed by fire in the 1980s, she has been replanted to Semillon. Geoff Hardy's K1 Vineyard at Kuitpo is only a few miles away from McLaren Vale as the crow flies. McWilliams retain some of the Hunter Valley's and Margaret River's finest sites. The estate has made fortuitous use of their widely dispersed vineyard assets to isolate the perfect parcels of Semillon and Sauvignon Blanc for an east meets west, classically styled dry white. The team have collated the pick of their West Australian fruit, steely and piquant grapes with crunchy green characters, passionfruit and lime. Delivered to the estate's wineworks at Pokolbin and assembled with some of the Hunter Valley's best Semillon, into a tightly knit, vigorous fruit forward white.

Hunter Valley Semillon is one of Australia's great contributions to the world of wine. The grapes at harvest are characterised by an ideal pH and perfect acidity. Elizabeth is a classic Hunter Valley white which has established itself as one of Australia's benchmark Semillon. Named in commemoration of the first ever visit to Australia by a reigning monarch in 1954, Elizabeth has claimed over fifty trophies and multi gold throughout it's long and illustrious history. Originally released in 1967 under the label Hunter Riesling, Elizabeth today stands as a praiseworthy and approachable example of the uniquely Hunter Valley Semillon style.

Mount Pleasant patriarch Maurice O'Shea was on a search for the best site in Hunter Valley to plant white wine varietals when he settled on the Love family farm in 1946. There are eight unique acres at Lovedale, which yield a prominently fruity and floral style of Semillon. Hand picked throughout the chill of early morning, destemmed and gently pressed to retain the purest free run juices for a fortnight of vinification. An elegant yet articulate palate, defined by pristine Semillon fruit characters, complexed by citrus and honeysuckle, lemongrass and lime.

An artisanal emulation of the great white Bordeaux, grown along the left bank of Garonne around the illustrious appellation of Graves. Mostly Sauvignon Blanc, a fifth of Semillon et soupcon de Muscadelle, each row of vine picked just as the intensity in the grapes peaks. Luxuriously barrel fermented in seasoned French oak, treated to pressage sauvage for texture, lees stirring battonage and a year's maturation, fashioned for complexity in a tittilatingly dry style, for those who prefer their whites, savoury, salacious and structurally refined.

Moss Wood enjoy the challenge of consistently producing the most substantial Semillon wine anywhere in Margaret River. The style has evolved since 1980 with the emphasis on achieving good depth of fruit flavour. Semillon grapes are painstakingly picked in three stages, green, medium and maximum ripeness, to enhance the complexity and achieve a highly engaging white wine experience.

For a wine that relies on lifted, zesty fruit notes as this one does, the final assembly sits very close to perfect. Ribbon Vale's fruit produces a different style to that grown at neighbouring Moss Wood. Sauvignon Blanc brings major aromaticness to the wine, the Semillon component contributes heightened flavour profiles. Ribbon Vale is vibrant and juicy, pristine and finer than most variants of the blend. Flavour builds in the glass before a finish that is refreshingly crisp with zippy acidity and an aftertaste that's long and fruitful, dry and lingering.

A refreshing white exhibiting intense fruit and concentrated flavours, Montage beckons to be enjoyed with good food.

Montage are fashionable wines, blended for contemporary palates, in fully approachable modern styling, crafted at the De Bortoli wineworks in Bilbul on the Riverina. The label depicts a montage of architectural elements that reflect the De Bortoli family's heritage. A bright and refreshing union of Chardonnay with Semillon, exhibiting intense fruit and concentrated flavours, designed for good food.

McWilliams retain some of the best vineyards and are well positioned to deliver the most approachable wines, always displaying good style and purity of varietal expression. Your Inheritance is mostly Semillon with a third of Sauvignon Blanc, its zesty acid backbone provides structure and length, time spent on sedimentery yeast lees has added palate weight and texture to the fine palate. Inheritance is crafted to drink beautifully upon release, simply scrumptious with schnitzel and perfect with prawns.

An immensely satisfying effort, this fine aged Oloroso is a blend of luscious fortified wines across several vintages at an average five years of age. The fortification takes place gradually, by the addition of no more than two per cent of a high quality neutral spirit at any one time, permitting winemakers to arrest vinification at precisely the desired level of sweetness. A delight to sip at any time of day, elegant and long, just a touch spicy, the dance of fruit flavours and Flor notes make Hanwood the perfect chilled aperitif or accompaniement to rich foods.

Crafted in the old world way, according to the traditional flor solera system. Wines are secondarily fermented under unique Flor caps, yeasts which grow on top of the Apera, releasing aldehydes and infusing the Sherry with lifted, nutty characters. Clean and mellow, gracefully dry and pleasingly rancio, exquisite with a warm alcohol length of aromatic malt flavours and integrated aged oak. Superb as a chilled aperitif, the Amontillado Apera style is served on classical menus alongside aspic, game birds and the finest double consomme.

Early Harvest are crafted from the first pick of season, into a new and refreshing style that's lower in calories and alcohol than other dry whites. Lenton Brae can justifiably claim to be one of Margaret River's leading proponents of the ebullient fusion between Semillon and Sauvignon Blanc, having claimed multi trophies and gold medals for the style at regional, state and national competitions. The site was chosen after a chance conversation with the owner of Moss Wood who mentioned that the soils were uniformly excellent and equal to those of the eminent vineyard nearby. The overriding philosophy at Lenton Brae is to construct wines which rank among the Margaret River's finest.

The proprietors at Le Tertre are so fond of the travails and rewards of Botrytis wine, that they have turned their entirety of their acreage to Sauternes. Harvesting takes place grape by grape to include only those berries which are Botrytised and perfect for the purpose. Vineyards are picked over several passes among the vines at different times throughout each vintage, to apply the painstaking pruning and selection methods which are unique to the Sauternes region. Tertre Du Lys is powerful on the palate with delicious flavours and elegant aftertaste, fullness and balance, richness and ripe acidity.

The most famous and prestigious sweet white wine in the world, vines of the Appellation Sauternes Controlee are stimulated by a unique microclime during autumn, as sunny dry weather of the day alternates with cool fog at night. Due to the extremely low yields of two to three glasses per vine, Sauternes are extraordinarily complex and intense. Offering a wide range of spell binding perfume and flavours, Sauterne develops as it ages, unravelling immensely attractive layers of honeyed characters, toasted nuts and candied fruits.
