William Salter was one of the first to purchase land in the Barossa. He built a stone house for his family naming it Mamre Brook, after Abrahams spiritual home in the book of Genesis. Inspired by elder bottles of Pewsey Vale Riesling, Yalumba resolved to make an early harvest wine with lower alcohol, a fine balance of natural acids and idyllic levels of residual sugar. Prima is made from grapes picked three to four weeks before the rest of the vineyard. Chosen for their fine citrus flavours, grapes are carefully selected when their natural sugar levels are near 10° Baume. The wine is finished to a semi dry style which retains some of the fruit in balance with chalky mineral acidity, exhibiting purity of style, as it evoves layers of toastyness and spice.

Marble Hill was a stately old manor in the Adelaide Hills, the colonial Governor’s summer residence. Planted to a unique clone of Burgundy Chardonuet in the 1860s, the ancient vines came to the attention of the legendery David Wynn, who removed cuttings back to Mountadam, the oldest cool climate Chardonnay vines on the continent. The original stocks in Burgundy were wiped out by phylloxera and Marble Hill was destroyed by fire in the 1950s. There truly is no Chardonnay in the world like Marble Hill.

It came down to the wine industry press to convince Irvine that the timing was right to release a Merlot which showed what the flagship Irvine estate wines were really all about. Springhill is made from grapes which are ripened longer than usual, accentuating depth of flavour, while adding more fruit. All this brings about the excellent, soft but full bodied texture and mouthfeel, advancing an argument for the hegemony of Merlot.

Why Meslier? Within the region of Champagne Meslier, or Petite Meslier as it is otherwise known, the Meslier grape is used, albeit in small quantities. Prized for it's acidity it gives the sparkling wine a vivaciousness synonymous with the style. Not only does Meslier bring acidity, but also vinosity and delightful light florals to both bouquet and taste. Irvine decided to tirage Meslier completely on its own for a number of reasons, but primarily to find out exactly what the grape could offer when ripened fully and fashioned into a pure Methode Traditionelle.
