Para Grand is named after the Para River that flows through the centre of the Barossa Valley. Established by Joseph and Johanna Seppelt in 1851, just fifteen years after the settlement of South Australia, Seppeltsfield can be proud of a great heritage and national treasure of Australia's oldest fortified wines. DP116 Aged Flor is crafted from the Palomino grape, renown for its neutral flavour profile and suitability as a dry Apera. A layer of yeast or Flor is encouraged to form a cap on the ageing fortified Palomino wine, building richness and infusing wonderful bread notes into the refreshing dry style.

In 1866, plans to build a new stone cellar were sanctioned by Seppeltsfield's founder John Seppelt. In 1878 the stone cellar was completed by his son Benno. To celebrate, in a gesture considered innovative and inspiring, Benno selected a puncheon of his finest wine and gave instructions that it was not to be bottled for a hundred years. This became a magnificent tradition and Seppeltsfield Wines are now the only winery in the world to have significant stocks of wine laid down over consecutive vintages for more than a century.

Norm Doole and Drew Dowie were growers who took the plunge into vinifying their own fruit and who met with immediate success. Enlisting the help of marketer Leigh Gilligan, legendary winemaker Brian Light and renowned designer Barrie Tucker, the fledgling Dowie Doole brand was established in the 1990s. Essentially a McLaren Vale operation, the Dowie Doole team have spared no expense in retaining the finest of the Adelaide Hills harvest, for an exquisite Sauvignon Blance of crispness, juicy fruit flavours and cleansing mineral finish.

Certain grape varieties are naturally suited to particular climes whence they can create superior wine, it's simply second nature. Is there any mix of grapes in the world of wine that can replace the affinity between Cabernet, Shiraz and Merlot? Likely not. It's up to the devoted growers of Dowie Doole to bring together the most suitably symbiotic batches of fruit from their superlative McLaren Vale sites. John Marshall forged his mother’s signature to enlist in the RAAF, he flew Tiger Moths and gained notoriety for his acumen at loop de loops. He is best remembered in vintages of Adelaide Hills Montipulciano, left to the influence of wild yeasts and a course of cold soak, hand plunged until sugar dry on the sixth day of ferment. Batches are pressed off skins to oak barrel for completion of malolactic and a judicious term of age. Unfiltered to bottle, evocative of black cherries, mulberry and redolence of cassis, bursting with the savouryness of sage leaf, olives and delish vinosity.

Hand picked grapes off the estate Home Block on the eastern ridge of Barossa Valley, the frugal vines yield a meagre harvest of small berries exhibiting the most amazing concentration. Bunches are destemmed to fermenters and cold soaked for the magic of wild yeasts, several days of cool vinification are treated to hand plunges and rack returns until completely sugar dry. A good old fashioned basket press and ten weeks of malolactic are followed by twenty four months of age. Douglas Seabrook was the longest serving chairman of judges at the Royal Melbourne Wine Show, he adjudicated over the most memorable vintages for thirty years and held a passion for great Riesling. From a single superb site at Springton in the Adelaide Hills, an exceptional sixty year old vineyard which lies in a secluded valley and ripens much later than most other sites on the surrounding hills. The founder was William John Seabrook, born of Tasmania to a family of builders, his thirst for wine drew him to Victoria where he learned the craft of the merchant and established W.J. Seabrook & Son in 1878. Parcels of Cabernet Sauvignon are crushed and destemmed to open top fermenters for a warmish vinification, aimed at extracting bright red fruit characters and a judicious measure of sweet berry tannins. Conspicuous for her arrestingly ripe, juicy fruit flavours, a daintily perfumed accord, bursting with ripe grape characters over a teasingly petulant palate and sweetly satiating finish.

One of the new world's most exclusive, ancient vineyard wines, awaited annually by the most discerning Shiraz enthusiasts around the globe. Only ever bottled in the finest vintages, fruit is sourced from the superior Ahrens Vineyard at Lyndoch and the historic Moorooroo site at Jacobs Creek, which for more than 120 years, ended up with Orlando. Moorooroo is made from the four remaining rows of the original William Jacob Shiraz plantings, saved from the government sponsored vine pull schemes of the 1980s by estate patriarch Ed Schild.

Grapes for the stately Moorooroo super premium Shiraz are sourced from the oldest commercial vineyard in Australia, the fruit of two centuries viticulture in the Hundred of Moorooroo, between Jacob’s Creek and North Para River. Schild is one of the most respected names in Barossa viticulture. Relative latecomers to the region, they established their plantings in 1952 after three decades of adversity in the Mallee. A careful selection of the ripest and plumpest Merlot grapes is harvested off the elite Schild estate Angas Brae property. From the home of the 2007 Jimmy Watson, the fruit of McLaren Vale's illustrious Block 3 has also claimed Winestate Shiraz of Year and hotly contested VISY Great Australian Shiraz Challenge. Estate founder Domenico Scarpantoni established a peerless reputation as vitculturalist during distinguished tours of duty at Seaview and Thomas Hardy Tintara. Block 3 sets the benchmark in McLaren Vale Shiraz, vinified from grapes hand picked off gnarled and parched, dry grown old vines, seventy years and more of age.

Your passionately pink Nebbiolo is a revelation, that comely lipstick hued wines can be as complex, as engaging and engrossing as full bodied red. Adelaide Hills is the place, a single elite vineyard at Gumeracha, Nebbiolo has found a splendid home away from home, a terroir and clime which ripen the tannins fully and encourage the fleshiness of fruit to bloom into a cornucopia of sumptuous bramble characters. This is the Rosé with drive and weight of flavour to mate alongside robust gamey recipes, wild duckling, venison loin or succulent crackling pork.

A mostly Old Vines Grenache, redolent with lifted aromatics and dulcet fruit flavours over a length of refined, sandy tannins. Shiraz contributes red berries, spices and palate weight, Touriga brings pungency, plum pudding, dried herb and floral notes. Mataro adds textural tannin structure and the perfumes of Provence.
