Drawn from stocks of Very Old Sherries, dating back to the nineteenth century, assembled to an average minimum age of twenty five years. Fruit is sourced from the Oloroso designated, chalky soil vineyards of Pago Carrascal and treated to the ancient Solera system, elevated through tiers of maturing barrels and topped up with younger wines as they angels take their share. The resut is a concentration of opaque, nutty flavours, marmalade and vanilla, rich, elegant and beautifully balanced with barely a hint of sweetness.

Valdespino is one of the most treasured Sherries. El Candado is made from Pedro Ximenez grapes which are left out in the sunshine for at least a fortnight after harvest. The grapes slowly dehydrate, absorbing the unique and discernible characters of the Mediterranean as they turn into raisins. The sugar levels rise and the fruit is crafted into a wine showing an intense mahogany colour and alluring bouquet of aged rancio fruit. The palate is velvety rich, endowed with layers of complexity, remarkably smooth with a long and clean, exquisite aftertaste.

The Stanton & Killeen parcels are just three kilometres due west of Rutherglen, on picturesque, gently undulating pastorals. Thirty hectares of the best well drained soils are planted to vine, a mix of gravel ridges and red loam slopes, under which lie auspicious porous clays. It is on these latter soils that the Classic Muscat is grown. Sunning the oaken barrels which hold various vintages, rotation of the stocks through a complicated Solera system, slowly develops the melt in your mouth richness, an artisanal recipe handed down through six generations of Stanton Killeen.

DP116 Aged Flor is crafted from the Palomino grape, renown for its neutral flavour profile and suitability as a dry Apera. In 1866, plans to build a new stone cellar were sanctioned by Seppeltsfield's founder John Seppelt. In 1878 the stone cellar was completed by his son Benno. To celebrate, in a gesture considered innovative and inspiring, Benno selected a puncheon of his finest wine and gave instructions that it was not to be bottled for a hundred years. This became a magnificent tradition and Seppeltsfield Wines are now the only winery in the world to have significant stocks of wine laid down over consecutive vintages for more than a century.
