Highland Park's noble Peats are cut by hand from Hobbister Moor, only seven miles from the Distillery. Over nine thousand years old and nearly four metres deep, it’s composed of layer upon layer of densely compacted vegetation, the DNA of Orkney. Distilled from a malt of imported Inverness Highlands grown barley, aged in a selection of pre loved American Bourbon oak and bottled at a judicious 46%. The Original Pure Australian Single Malt, a flagship Whisky distilled from Tasmanian malted barley, roaring 40s rainwater and yeast, matured in American white oak barrels. After an exhaustive search throughout Japan to find the purest water, the Master Blender of Suntory's distinguished Yamazaki Whisky, settled on Mount Kaikomagatake to establish Hakushu Distillery. Shochu (pronounced show-chew) is a traditional Japanese spirit. Haamonii means harmony and it is made for sharing. William Grant was born in 1839, he started working in the distillery business as a bookkeeper in 1866. Grant could scarce have imagined that his own brand would become a worldwide business or that it would still be wholly owned by his family five generations later. It took Grant twenty years to acquire the expertise and funds to launch himself as an independent distiller. Grant's son-in-law became the new company's first salesman, he knocked on doors with samples. On the 181st call he secured his first sale, after a further 503 he landed the second.

A suitably rare and exclusive expression of Lowlands Whisky, assembled from a blend of two painfully precious Malts from Distilleries which are no longer in existence. Ladyburn and Inverleven were two Hiram Walker Distilleries which closed in 1975 and 1991 respectively.
