There are now two estate vineyards, located within two kilometres of each other in Wilyabrup Valley, dry grown and farmed through traditionally organic techniques. The sanctity of soil yields a vividly varietal Cabernet Franc of finite peerage.

Moss Wood's Cabernet Franc shows less leafiness than Cabernet and can be picked earlier, when the fruit shows ripe berry flavour, similar to summer pudding. Further ripening tends to produce dark plum notes. While still slightly green, Moss Wood's Petit Verdot has an herbal note, more coriander than leaf, an ethereal, aromatic lift, redolent of violets and sweet berries.

They were struck by the similarities of soil between the prosepective Biserno vineyards and Bordeaux, inspiring them to plant Cabernet Franc, the dominant component in Pino di Biserno, joined by varying percentages of Cabernet Sauvignon, Merlot and Petit Verdot. A rich cepage of the requisite Bordeaux varietals which have found a new home amongst the silty, alluvial clays and rich sand soils in Tuscany's west.
