Very few vineyards yield the quality of fruit that merits vintaging into a statuesque wine dominated by the prettily fragrant Cabernet Franc. Woodlands were established from the ground up with a view to achieving limited harvests of the arcane Bordeaux varietals, only a few hundred cases of good red wine per vintage. There are now two estate vineyards, located within two kilometres of each other in Wilyabrup Valley, dry grown and farmed through traditionally organic techniques. The sanctity of soil yields a vividly varietal Cabernet Franc of finite peerage.

Moss Wood's Cabernet Franc shows less leafiness than Cabernet and can be picked earlier, when the fruit shows ripe berry flavour, similar to summer pudding. Further ripening tends to produce dark plum notes. While still slightly green, Moss Wood's Petit Verdot has an herbal note, more coriander than leaf, an ethereal, aromatic lift, redolent of violets and sweet berries.

From fruit grown to three different plots, west of the road that joins Bibbona to Bolgheri. Soils are sandier and climes slightly warmer during the summer months, conditions which are ideal for growing Syrah, which accounts for a third of Insoglio del Cinghiale. An intense ruby red colour, the nose is powerfully fruit driven with hints of liquorice and spiced oak. The palate is exquisitely balanced, harmonious, richness of fruit supported ripe, round tannins. Its peppery character makes it perfect with game, such as the local wild boar after which it is named.

Lodovico and Piero Antinori surveyed the stunning landscapes along the Upper Maremma, among the hillsides of Bibbona, bordering the DOC Bolgheri. They were struck by the similarities of soil between the prosepective Biserno vineyards and Bordeaux, inspiring them to plant Cabernet Franc, the dominant component in Pino di Biserno, joined by varying percentages of Cabernet Sauvignon, Merlot and Petit Verdot. A rich cepage of the requisite Bordeaux varietals which have found a new home amongst the silty, alluvial clays and rich sand soils in Tuscany's west.
